Raspberry and Frangipane Tarts

What to do with left over puff pastry… Make Raspberry and Frangipane Tarts!!



  • 60g Butter
  • 60g Caster Sugar
  • 1 small egg
  • 60g Ground Almonds
  • 1Tbsp Plain Flour
  • 1/2Tsp Almond Extract


  1. Preheat the oven to 180C.
  2. Roll out the puff pastry to 3mm thickness and cut into squares.
  3. Mix all ingredients of the frangipane together and add a small amount to the centre of each square (the frangipane will spread as it cooks so don’t add too much). Sprinkle with raspberries.
  4. Bake in the oven for 20-25 minutes.
  5. Enjoy with a cup of tea!
