Grilled Skewers

A lovely, healthy, meal for the summer! You can literally make the colour of the rainbow with these – the kids will love them! Season them well or serve them with a side sauce or relish. You can even try brushing garlic oil over them before putting them in the oven… yum!!

Ingredients

  • 75g Paneer/ Halloumi/ Meat of choice, per person
  • Choice of veg (e.g. onion, peppers, mushroom, courgette, aubergine)
  • Cooking Oil, to drizzle

Directions

  1. Preheat your grill to a medium heat and soak your skewers in cold water (this will prevent them from burning under the grill).
  2. Cut the cheese/meat into medium-small (3-4cm) cubes.
  3. Choose your vegetables and cut them into a similar size.
  4. Push your ingredients onto two skewers per person, making sure everything is evenly spread out, without too much of a gap in between.
  5. Place the skewers onto a lined baking tray. Season with salt and pepper and drizzle with a little oil.
  6. Cook the skewers under the grill (not too close to the grill – if you’re using the oven place them on a middle shelf) for 5 minutes, turn the skewers over and grill or 5 more minutes to cook them evenly. KEEP AN EYE ON THEM AT ALL TIMES – they can char very quickly. If using meat, check that it is cooked by cutting one piece in half.
