Bruschetta

Bruschetta is a simple thing that can taste amazing, with the fresh flavour of the tomatoes and the rich garlic oil – you can’t really not like it!

Italian meaning for bruschetta = Toast

Ingredients

  • 1 Baguette
  • 50ml Olive Oil
  • 2 Cloves Garlic, crushed
  • 250g Cherry Tomatoes
  • Fresh Basil
  • Salt and Pepper

Directions

  1. Heat your oven grill to medium-high.
  2. Slice your baguette diagonally into thin (about 2cm) pieces. Place on a baking tray and toast under the grill until golden, turn over and toast on the other side.
  3. Combine the olive oil and crushed garlic and lightly brush onto each piece of bruschetta.
  4. Finely dice the cherry tomatoes, place in a bowl and toss in salt and pepper. Spoon a generous amount onto each piece of bruschetta and top with a basil leaf.

*Alternatively, top your bruschetta with Mozzarella/ Dried meats/ Olives/ Pesto/ Garlic/ Balsamic or whatever you fancy!
