Patatas Bravas

Sautéed potatoes served with a rich, spicy tomato sauce and eaten with cocktail sticks… what more could you want? I roast my potatoes as then I can be getting on with other things whilst they’re in the oven, but feel free to sauté them in a frying pan if you’d prefer.

Ingredients

  • 1 small onion, finely diced
  • 2 garlic cloves
  • 1 Tin Chopped Tomatoes
  • 1 tbsp tomato puree
  • 2 tsp paprika
  • Pinch of chilli powder
  • Pinch of sugar
  • 900g potatoes
  • Olive oil

Directions

  1. Prepare the sauce: Heat a little oil in a pan, add the onion and fry for about 5 minutes until softened. Add the garlic, tomatoes, tomato purée, paprika, chilli powder, sugar and salt and bring to the boil, stirring until thick.
  2. Preheat the oven to 200ᵒC. Peel and cut the potatoes into small cubes. Place them in a bowl and sprinkle with oil, salt and pepper, toss to coat. Roast for 25-30 minutes, until the potatoes are crisp and golden.
  3. Tip the potatoes into small dishes and spoon over the tomato sauce. Serve with cocktail sticks.
