These muffins make a lovely breakfast or tasty snack for when you’re craving something savoury! These are super easy to make and can be ready in as little as 30 minutes.
Ingredients
- 150g Self-Raising Flour/ 150g Plain flour + 1/2 Tsp Baking Powder
 - 50g Cheese, grated
 - 1 Tsp Mustard, optional
 - 1 Egg
 - 125ml Milk
 - Your choice of fillings – ham/ cooked bacon lardons/chopped bacon/ spring onions/ mushrooms/ tomatoes or anything else you fancy
 
Directions
- Preheat the oven to 180ᵒC. If you have one, grease a 12 hole silicon muffins tray with a little oil. If not, line your muffin tray with 10 cupcake cases.
 - Sift the flour and grate the cheese into a large mixing bowl.
 - Add the egg in with the milk and mustard, if using.
 - Pour the wet mix into the dry mix and stir with a wooden spoon to combine. Stir in your chosen ingredients.
 - Use two tablespoons to spoon the mixture into the muffin holes – yous should get about 10 out of the mixture.
 - Bake on a middle shelf in the oven for 12 minutes until a skewer comes out clean. Place at the top of the oven for a couple more minutes for golden brown tops.
 - Transfer to a wire rack and allow to cool for 20 minutes, if you baked them in cases, before removing them – otherwise the paper can stick a little.
